Over 100 years ago, the wheat we ate was nutritious and safe to eat by everone except the 2% with Celiac Disease. In the last 30 years, genetic modification of wheat has created a wheat with more allergenic reactions. But even worse, toxic chemicals are now used to speed-up the harvest of the wheat. These toxic chemicals are now contained in the herbicide called Roundup. The two main poisons are called glyphosate and 2,4-D. You may remember that 2,4-D was one of the main components of Agent Orange that caused massive birth defects in children born in Central Viet-Nam. And now it is in Roundup. Glyphosate is a broad spectrum chelator that locks up metal nutrients. Because it locks up Chromium, insulin does not work. Because it locks up cobalt, we cannot make cobalamin [vitamin B-12] that controls cell division and growth.
The main problem is these poisons cause symptoms similiar to Ceiiac Disease in a significant portion of our population. I call this pseudo celiac and it exists in the United States because Roundup is used to harvest most of our wheat and this poison stays in the wheat. When those with real Celiac go to Europe, the must still avoid wheat. When those with pseudo Celiac go to Europe, they find that they can eat the bread, pasta and cake because Roundup is NOT used in Europe to harvest wheat. For the same reason, those with pseudo Celiac can eat organic bread, pasta and cake in the United States because organic does not allow the use of Roundup. Admitadly, there are occationly bread, pasta and cake falsely labeled organic that are NOT organic. These cases need to be reported.
